Ingredients
4 medium
ripe banana’s, the ones no one will touch in the fruit bowl 😆
1/4 cup
rice bran oil
1/4 cup unsweetened
greek yoghurt
1/3 C
caster sugar
1 egg
1 teaspoon
vanilla essence
1 1/2 cups
plus 2 tablespoons self-raising flour
3/4 cup
rolled oats
Method
Preheat the oven to 170°C and line a loaf tin with baking paper.
Place peeled banana’s, rice bran oil, yoghurt, sugar, egg and vanilla into a large bowl. Sift in flour, add oats and mix with an electric beater until just mixed (you may wish to mash the banana’s first – depends how ripe they are).
Spoon into a loaf tin and bake for 45-50mins or until a skewer comes out clean.
Cool for 15mins in the tin and then finish cooling on a wire rack.
Great sliced warm and served with a generous spread of peanut butter and a brew of tea.
If it lasts that long, it is also delicious toasted with a light spread of butter, several days later. We usually make a double batch in the ETP test kitchen for just that reason 😉
